Kale Salad.

3 cups of Kale

1 carrot, shredded

pine nuts

dried cranberries

sesame seeds

1 tbs dijon mustard

2 tbs white wine vinegar

salt and pepper, to taste

 

*Kale is a cruciferous vegetable, much like broccoli, cabbage, brussel sprouts and collards. 

*One cup of Kale contains 5 grams of fiber, 180% of vitamin A and 200% of vitamin C. It’s rich in copper, magnesium, potassium, iron and manganese. Kale has many anti-cancer benefits because it contains cartenoids and flavanoids, which are two powerful antioxidants. The high fiber content helps to lower cholesterol and reduces the risk of heart disease, while vitamin K is a very potent antioxidant and is necessary for bone health.
