Sauteed Chicken with Asparagus, Bell Pepper & Cherry Tomatoes

Healthy eating doesn’t have to be boring. Adding in spices, different oils and fragrant herbs can turn a boring dish into something flavorful and divine.

For this simple dinner, I used baked chicken, that I had cooked in the morning, seasoned with sea salt and pepper. Toss in a bunch of veggies and you’re done!

So easy, right?

2 chicken breasts, thinly sliced (previously baked at 350 degrees, 30 minutes)

1 yellow bell pepper

1/2 yellow onion, thinly sliced

6 asparagus spears, end trimmed

10 cherry tomatoes, halved

1 tbs sesame seeds

2 tbs grapeseed oil (has a higher smoke point than olive oil)

1 tsp soy sauce (replaces the salt)

1/2 tsp ginger paste

pinch of pepper

Sautee onion over medium high heat, for about 5 minutes. Add in the bell pepper and asparagus.

Toss in the chicken, cherry tomatoes and sesame seeds.

Add in ginger paste and soy sauce, sautee for another 5 minutes.

Serve hot.
