Go Green Salad with Quinoa

3 organic romaine hearts

1 medium seedless cucumber, cut in cubes

2 tbs finely chopped red onion

1/4 c. garbanzo beans, drained and rinsed

1/4 c. jicama, cut into cubes

1 1/2 tbs fresh dill

1 tbs fresh parsley

1/3 c. quinoa

1/3 c. red wine vinegar

drizzle of olive oil

1/4 tsp himalayan pink salt & pepper

1 tsp garlic powder

Layer the quinoa at the bottom of the bowl. Add in the lettuce and then the veggies.

Mix in the herbs with the dressing. Toss to coat.

Sprinkle a little more quinoa on top.



*Jicama is a very low calorie, root vegetable and can be eaten both raw and cooked. It’s very high in fiber, antioxidants and vitamin c!

*Quinoa is a high protein grain that contains all of the eight essential amino acids! It’s low in fat, high in fiber, magnesium and calcium, while also providing manganese, which is a disease and cancer fighting antioxidant!
