Raw/Vegan Delights.

My girlfriend and I hit up our favorite raw/vegan restaurant in sunny Los Angeles over the weekend. Sun Cafe is my little heaven because almost everything on the menu somehow involves kale and THAT makes me a very happy girl. Plus, I was able to devour a fresh coconut within the hour, digging for meat and relishing in all its glory.

Here’s what we enjoyed!

RAW KELP NOODLES WITH MARINATED VEGETABLES IN A RUSTIC MARINARA

*Kelp, which is a type of seaweed, packs many nutrients and is incredibly low in carbohydrates and calories. It’s rich in over 70 minerals, including potassium, magnesium, calcium, iron and over 15 amino acids. They’re gluten, wheat and sugar-free, raw, vegan, have a neutral flavor and can be eaten both cold or warm. They’re a great and healthy substitution for pasta and rice! 

KALE COLOSSUS SALAD WITH SUN CHORIZO, MARINATED MUSHROOMS, ONIONS, PEPPERS AND TOPPED WITH RAISINS AND SLICED BANANAS.

*Kale is packed with vitamins and minerals that are essential for your heath. They’re loaded with vitamin K, C, B6, folic acid, calcium, potassium, iron, and are incredibly high in fiber. It’s one of the most versatile greens and can be served raw, cold, hot, sautéed, baked into chips and even thrown into smoothies!

*Yes, that’s a young, fresh, coconut! Another one of my obsessions. Coconut water is full of potassium, fat-free a very low in calories. It’s a great for after a workout to replenish your body with nutrients and also great for your overall health. Coconut meat is high in manganese, which helps you metabolize both fat and protein. It also contains potassium, which is necessary for muscle growth, and copper, which is important for the production of red blood cells. Store bought coconut waters can sometimes be loaded with added sodium and sugars, so if you can, buy the real thing at the market and drink/eat straight from the source!
