This is what I consider to be one of my most favorite and perfect meals. The combination between the nutty quinoa and the creamyness of the lentils and burrata cheese was greatly contrasted by the bitter arugula and fruity olive oil. It was served cold, but I could only imagine how great it would be warm! I had this while dining out with my brother and I plan on re-creating it very soon. I think I would even swap the burrata for some feta cheese, to give it a saltier bite!
