On the rare occasion that I’m not racing out the door, with my coffee and peanut butter toast in hand, I actually enjoy making breakfast. Specifically, I enjoy my Acai bowls that I first discovered a couple of years ago in Mission Beach. Full of powerhouse antioxidants and essential vitamins, this bowl is incredibly filling and even more delicious than it looks.
First, you need a blender. Very important here..
1 package of amazon Acai (found in the freezer/fruit section)
handful of frozen pineapple
handful of frozen blueberries
1 cup of unsweetened almond or coconut milk
1 scoop of vanilla protein powder, optional
Add in some homemade granola to the bowl and then pour in the Acai mixture.
Top with sliced bananas and a drizzle of organic honey!
*You could also top with unsweetened coconut.
