Fennel, Carrot and Chicken Salad

1 fennel bulb, sliced thin

3 carrots, shredded using a julienne slicer

2 persian cucumbers, peeled and shredded

1/2 avocado, diced

1/2 granny smith apple, diced

5 mint leaves, chopped

sesame seeds

slivered almonds

salt/pepper, to taste

drizzle with olive oil, apple cider vinegar

topped with rotisserie chicken for some protein.

toss everything together! simple, simple!
